Tilapia has firm, white meat, with a moist texture. This fish has a mild and sweet taste... which is just asking for lemon kick!
Rinse tilapia and cut three slits across on both sides.
Soak the fish with the lemon juice in shallow plastic or glass container. Let marinate in the refrigerator for 30 minutes, turning once.
In large bowl, combine onions, tomatoes, celery, rosemary, salt, pepper, and chili powder.
Stuff the tilapia cavity with the mixture. Put half of the remaining mixture in the bottom of a swallow baking dish. Then lay fish on top of the mixture. And add the rest of the mixture on top of fish.
Bake, uncovered, in a 400F (200C) oven 20 to 25 minutes, until fish flakes easily when tested with a fork.
Tilapia skin has a bitter taste and should be removed before eating.
Serve with rice and a glass of white wine.
You can use different kinds of whole fish for this recipe. Any firm, white-flesh fish works well.
